Easy Chicken Salad

I love Chicken Salad.  I always see it in the Deli case at the grocery store but never pick it up there because it tends to be heavy on the mayonnaise and fat.  For some reason I never end up making my own.  This past weekend I decided to make the best of being stuck inside on another snowy Sunday in New England and made some chicken salad.

Ingredients:

2 Boneless Skinless Chicken Breast, Cooked, Cooled and Chopped
1/3 Cup Red Seedless Grapes
1/3 Cup Sliced Almonds
1 Stalk (Rib) Celery
Mayonnaise (I used Miracle Whip Light) 
Whole Wheat Pita Pockets

Directions:


Combine Chicken, Grapes, Almonds and Celery in mixing bowl.  Add mayonnaise, start with 2 tablespoons and add as desired.



Place Chicken Salad in Pita Pocket.  I added some Spinach in my Pita Pocket.

Awesome Brownies

Over the years I have made my fair share of brownies both boxed mix and from scratch.  This is by far my favorite brownie recipe.  It is easy,  stays fresh for at least a week (if covered) and they have the perfect amount of sweetness. Simple chocolate perfection .

Ingredients
3/4 cup cocoa powder
1/2 teaspoon baking soda
2/3 cup butter, melted & divided (1/3 cup + 1/3 cup)
1/2 cup boiling water
2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon salt
1 1/3 cup flour
 1 cup chocolate chips

Directions

Set oven to 350ºF. Grease a 9x13" baking dish and set aside.

In a large mixing bowl, stir together the cocoa and baking soda. Stir in 1/3 cup of the melted butter until smooth then stir in the boiling water until the mixture is again smooth.









Stir in the sugar and eggs with the remaining melted butter. Stir in the vanilla and salt.


Add in the flour and chocolate chips, then stir until combined.

Spread the batter into greased baking pan and bake for 35-40 minutes, or until the edges start to pull away from the pan.  Do not over bake!

Cool completely in the pan.
